WThis is a home-style version of a beverage found on our latest cocktail list. Designed as a large-volume prepared mix that is bursting with the tastes of a Christmas time, making it excellent for a celebration. Save the extra citrus syrup for morning drinks, desserts, or to mix another batch of the drink.
The Bikini Cocktail
Makes enough for 10 servings
Ingredients for the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (makes 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Cordial: Combine all the items into a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Then, take off the heat and let it to cool down entirely. Decant to a clean bottle, seal and store in the fridge, it will last for up to one month.
To make Premix: Mix every liquid ingredients in a big jug, let it rest for an hour, then strain best through a fine cloth, so it's completely strained.
When ready to serve: Pour 85ml of the premix to a cocktail shaker packed with ice, and agitate gently for about 60 seconds to cool it down. Filter to a cold coupe glass or similar, decorate with some cranberries adding the final touch by giving it a light spray with the mandarin essence over the top.
